Here's a good one for if you are running out of time to shop for Christmas presents (especially if you are in lockdown AGAIN)

This was by far, the most difficult recipe to get right.

Its a gingery biscuit base, with ginger icing and sometimes topped with crystallized ginger. Diehard ginger fans only!
